Extrusion CoP #2 – Downstream Processing in Focus
Our July 2023 Extrusion Community of Practice session featured a deep dive into the topic of downstream processing of extruded products, guided by Karsten Schellhas.
With over 30 years of experience in meat processing operations and a recent focus on alternative proteins, Karsten brought a wealth of practical insight to the discussion. Rather than a formal presentation, this session followed an open discussion format for active participation and knowledge sharing across the group.
The session fostered rich dialogue around post-extrusion handling, shaping, cooling, cutting, and more – highlighting real-world challenges and strategies for scaling up alternative protein products.
