Extrusion CoP #10 – Lab-Scale Extrusion of Alternative Proteins & Meat Analogues
This month we were joined by Dr Matthias Mayser, Department Manager for Product Competence at Anton Paar TorqueTec (formerly Brabender), for a session titled: “Lab Scale Extrusion – Alternative Proteins and Meat Analogues.”
Drawing on his background in biology, mechanical engineering, and plant science, Matthias shared insights into lab-scale extrusion approaches for developing meat analogues and plant-based products. His presentation covered both practical considerations in lab setups and the role of extrusion in optimising texture and functionality in alternative protein applications.
Dr Mayser’s expertise in process optimisation and measurement technologies provided valuable context for the evolving role of lab-scale tools in the innovation pipeline.
